Amère bière Apperitif with Amer Picon, lemon cordial and beer.
Baeckeofe/Baeckaofa Three types of meat, marinated in white wine, slow baked with potatoes and other vegetables.
Berauwecker Fruit cakes eaten in the Haut-Rhin on 24th December.
Bibeleskaes/kas Fromage blanc with parsely, onion and garlic served with fried potatos.
Choucroute Cabbage served with meat and sausages or fish.
Fleischschnaker Ground meat, rolled up in a long pastry roll which is then cut into slices - swiss roll fashion. Served in a bouillon.

Spaetzle

Look like elongated, knobly gnocci. Made with 7 fresh eggs for every kilo of hard wheat semolina. Traditionally eaten with fish and kidney (rognons) dishes.

Flammekueche/Tarte flambée Thin-based Alsatian 'pizza' topped with cream, onions and lardoons. Tradition has it that you pick them up to eat.
Tarte à l'oignon Onion tart. Onions, cream, short-cust pastry and grated nutmeg.
Tarte alsacienne Apple tart.
Wedele Ham hock.

Kougelhopf Round sponge cake with a hole, topped with almonds, sprinkled with icing sugar and served with fruit.
Kougelhopf glacé Rum-flavoured ice-cream served in a Kougelhopf mould.
Käskueche/tarte au fromage A tart with sugared fromage blanc.
Tarte aux myrtilles Bilberry (blueberry) tart. A popular summer dessert in the Vosges.
Tarte aux quetsches Plum tart.
